Ingredients
  

Steak and Vegetables
  • 1 lb sirloin steak cut into bite-sized pieces
  • 2 medium sweet potatoes peeled and diced
  • 2 medium bell peppers sliced (any color)
  • 3 tbsp olive oil divided
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Prepare the Vegetables
  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet in a single layer.
Roast the Sweet Potatoes
  1. Roast the sweet potatoes in the preheated oven for 15 minutes.
  2. After 15 minutes, add the sliced bell peppers to the baking sheet and toss with the sweet potatoes.
  3. Return to the oven and roast for an additional 10 minutes, or until the sweet potatoes are tender.
Cook the Steak Bites
  1. While the vegetables are roasting, heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Season the steak bites with salt and pepper.
  3. Add the steak bites to the skillet in a single layer and cook for 2-3 minutes on each side, or until browned and cooked to your desired doneness.
Combine and Serve
  1. Once the steak bites are cooked, remove them from the skillet and let them rest for a few minutes.
  2. Serve the steak bites alongside the roasted sweet potatoes and peppers.
