Ingredients
  

Salad Base
  • 2 cups quinoa cooked and cooled
  • 1 cup chickpeas canned, drained and rinsed
  • 1 cup cucumber diced
  • 1 cup red bell pepper diced
  • 1 cup red onion finely chopped
  • 1 cup parsley chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon garlic powder

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the cooked quinoa, chickpeas, cucumber, red bell pepper, red onion, and parsley.
  2. Toss the ingredients together until well mixed.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and garlic powder until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss to coat evenly. Serve immediately or chill in the refrigerator for 30 minutes before serving.
