Beets and Oranges
  • 2 medium fresh beets about 8 oz each
  • 2 juicy navel oranges
Toppings
  • 1 cup crumbled feta cheese about 5 oz
  • 1/3 cup unsalted pistachios
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh mint leaves finely chopped
  • Salt to taste
  • Pepper to taste

Method
 

Preparation
  1. Preheat oven to 400°F (200°C). Wrap beets in aluminum foil and roast on a baking sheet for about 60 minutes until fork-tender. Allow cooling before peeling and slicing.
  2. While the beets roast, segment the oranges by cutting off both ends and removing the peel. Slice into segments.
  3. In a large bowl, combine roasted beet slices, orange segments, crumbled feta cheese, and chopped mint. Drizzle with olive oil and gently toss to combine.
  4. Just before serving, sprinkle pistachios on top for crunch. Season with salt and pepper to taste.
  5. Serve in a beautiful bowl or plate individually for an elegant touch.
