  • 1 cup quinoa rinsed
  • 1 cup diced bell peppers red and green
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 tbsp taco seasoning store-bought or homemade
  • 2 cups low-sodium vegetable broth
  • 1 tbsp olive oil

Method
 

  1. Heat olive oil in a large skillet over medium heat. Sauté the onion and bell peppers until soft, about 5 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Stir in ground turkey, breaking it apart with a spatula. Cook until browned, about 6-8 minutes.
  4. Mix in rinsed quinoa, taco seasoning, and vegetable broth. Bring to a gentle boil before reducing heat.
  5. Cover and simmer on low for about 15 minutes or until quinoa is cooked and liquid is absorbed. Stir occasionally.
  6. Fluff quinoa with a fork and serve hot with optional garnishes like avocado or cheese.
