Ingredients
  

Meat and Vegetables
  • 1 lb ground turkey lean
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 medium red bell pepper diced
  • 1 medium green bell pepper diced
  • 1 medium apple peeled and diced
Spices and Liquids
  • 1 can diced tomatoes 14.5 oz
  • 1 can kidney beans 15 oz, drained and rinsed
  • 1 cup chicken broth low sodium
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Garnishes
  • 1 cup cheddar cheese shredded
  • 1 cup sour cream
  • 1 bunch green onions sliced

Method
 

Cook the Turkey and Vegetables
  1. In a large pot, heat a tablespoon of oil over medium heat. Add the ground turkey and cook until browned, about 5 minutes.
  2. Add the diced onion, garlic, and bell peppers to the pot. Sauté until the vegetables are soft, about 5 minutes.
Add Remaining Ingredients
  1. Stir in the diced apple, diced tomatoes, kidney beans, chicken broth, chili powder, cumin, salt, and black pepper.
  2. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, stirring occasionally.
Serve
  1. Ladle the chili into bowls and top with shredded cheddar cheese, sour cream, and sliced green onions.

Notes
