Ingredients
  

Noodles
  • 8 oz rice noodles or any preferred noodles
Peanut Sauce
  • 1/2 cup creamy peanut butter natural style preferred
  • 1/4 cup soy sauce low sodium
  • 2 tbsp honey or maple syrup for vegan option
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 clove garlic minced
  • 1 inch ginger fresh, grated
  • 1/4 cup water to thin the sauce as needed
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup carrots julienned
  • 1 cup snap peas trimmed
  • 1/4 cup green onions sliced for garnish
  • 1/4 cup cilantro chopped for garnish

Method
 

Prepare the Noodles
  1. Bring a large pot of salted water to a boil. Add the rice noodles and cook according to package instructions until al dente.
  2. Drain the noodles in a colander and rinse under cold water to stop the cooking process.
Make the Peanut Sauce
  1. In a mixing bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and water until smooth.
Combine and Serve
  1. In a skillet over medium heat, add the cooked noodles and vegetables. Pour the peanut sauce over the top and toss to combine, cooking for an additional 2-3 minutes until heated through.
  2. Serve hot, garnished with green onions and cilantro.
