Prepare the Noodles
- Bring a large pot of salted water to a boil. Add the rice noodles and cook according to package instructions until al dente.
- Drain the noodles in a colander and rinse under cold water to stop the cooking process.
Make the Peanut Sauce
- In a mixing bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and water until smooth.
Combine and Serve
- In a skillet over medium heat, add the cooked noodles and vegetables. Pour the peanut sauce over the top and toss to combine, cooking for an additional 2-3 minutes until heated through.
- Serve hot, garnished with green onions and cilantro.
