Ingredients
  

Salad Base
  • 4 cups mixed greens such as romaine, spinach, or arugula
  • 1 cup shredded carrots
  • 1 cup red bell pepper thinly sliced
  • 1 cup cucumber thinly sliced
  • 1 cup red cabbage shredded
  • 1/2 cup chopped fresh cilantro
Peanut Crunch
  • 1/2 cup unsalted peanuts roughly chopped
  • 1/4 cup toasted sesame seeds
Spicy Lime Dressing
  • 1/4 cup peanut butter smooth or crunchy
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon honey or maple syrup for vegan
  • 1 teaspoon sriracha adjust to taste
  • 1 clove garlic minced
  • 2 tablespoons water to thin the dressing if needed

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine mixed greens, shredded carrots, red bell pepper, cucumber, red cabbage, and cilantro.
  2. Toss the salad ingredients together until well mixed.
Make the Dressing
  1. In a separate bowl, whisk together peanut butter, soy sauce, lime juice, honey, sriracha, minced garlic, and water until smooth.
  2. Adjust the consistency with more water if necessary.
Combine and Serve
  1. Drizzle the spicy lime dressing over the salad and toss to combine.
  2. Sprinkle chopped peanuts and sesame seeds on top before serving.
