Ingredients
  

Protein
  • 200 grams shrimp peeled and deveined
  • 1 cup chicken breast diced
Vegetables
  • 2 cups cooked jasmine rice preferably day-old
  • 1 cup peas fresh or frozen
  • 1 medium carrot diced
  • 2 stalks green onions sliced
Sauces and Seasonings
  • 3 tablespoons soy sauce or to taste
  • 1 tablespoon fish sauce optional
  • 1 teaspoon sugar to balance flavors
  • 1 tablespoon lime juice freshly squeezed
Oils
  • 2 tablespoons vegetable oil for frying
Garnish
  • 1 lime lime wedges for serving
  • 1 tablespoon cilantro chopped, for garnish

Method
 

Prepare the Ingredients
  1. Gather all ingredients and prepare them as listed.
Cook the Protein
  1. Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Add the shrimp and chicken, and stir-fry until cooked through, about 5 minutes. Remove and set aside.
Stir-Fry the Vegetables
  1. In the same wok, add the remaining oil. Add the diced carrot and peas, and stir-fry for 2-3 minutes until tender.
Combine Rice and Seasonings
  1. Add the cooked rice to the wok, breaking up any clumps. Stir in the soy sauce, fish sauce, sugar, and lime juice. Mix well.
Add Protein and Serve
  1. Return the cooked shrimp and chicken to the wok, and add the green onions. Stir-fry for another 2 minutes until everything is heated through. Serve hot with lime wedges and cilantro on top.

Notes
