Batter Ingredients
  • 1 cup all-purpose flour
  • 1 cup buttermilk
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper
Filling Ingredients
  • 1 cup shredded cheddar cheese
  • 1 cup jalapeños, diced fresh or pickled
  • 1/2 cup cream cheese softened
For Frying
  • 2 cups vegetable oil for deep frying

Method
 

Prepare the Batter
  1. In a mixing bowl, combine flour, baking powder, salt, black pepper, and cayenne pepper.
  2. In another bowl, whisk together buttermilk and egg.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
Make the Filling
  1. In a separate bowl, mix together the cheddar cheese, diced jalapeños, and cream cheese until well combined.
Form the Bites
  1. Take a small amount of the filling and shape it into a ball.
  2. Dip the ball into the batter, ensuring it is fully coated.
  3. Repeat with remaining filling and batter.
Fry the Bites
  1. Heat vegetable oil in a deep fryer or frying pan to 350°F (175°C).
  2. Carefully drop the battered bites into the hot oil, frying in batches until golden brown, about 3-4 minutes.
  3. Remove with a slotted spoon and drain on paper towels.
Serve
  1. Serve hot with ranch dressing or your favorite dipping sauce.
