  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup red bell pepper diced
  • 1 cup corn canned or frozen
Chicken
  • 2 cups chicken breast grilled and chopped
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Toppings
  • 1 avocado sliced
  • 1/2 cup cheddar cheese shredded
  • 1/4 cup cilantro chopped

Method
 

Prepare the Chicken
  1. Season the chicken breasts with cumin and chili powder, then grill them over medium heat for about 6-7 minutes per side until fully cooked.
  2. Once cooked, let the chicken rest for a few minutes before chopping it into bite-sized pieces.
Make the Dressing
  1. In a small bowl, whisk together olive oil, lime juice, honey, salt, and black pepper until well combined.
Assemble the Salad
  1. In a large mixing bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, red bell pepper, and corn.
  2. Add the grilled chicken on top of the salad mixture.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Top with sliced avocado, shredded cheddar cheese, and chopped cilantro before serving.
