Ingredients
  

Rice Base
  • 1 cup long-grain white rice uncooked
  • 2 cups water
Taco Filling
  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup salsa
Toppings
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream
  • 1/4 cup sliced jalapeños optional

Method
 

Prepare the Rice
  1. In a pot, bring 2 cups of water to a boil. Add 1 cup of rice, reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and water is absorbed.
Cook the Taco Filling
  1. In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.
  2. Add taco seasoning, black beans, corn, and salsa to the skillet. Stir well and cook for an additional 5 minutes until heated through.
Assemble the Taco Rice Bowl
  1. In bowls, layer the cooked rice, then top with the taco filling. Add shredded lettuce, diced tomatoes, cheese, sour cream, and jalapeños as desired.
