Prepare the Mushroom Filling
- Heat olive oil in a skillet over medium heat. Add sliced mushrooms and sauté for about 5 minutes until they are browned.
- Add minced garlic, thyme, salt, and pepper. Cook for an additional 2-3 minutes until fragrant. Remove from heat.
Assemble the Sandwiches
- Spread softened butter on one side of each slice of bread.
- On the unbuttered side of four slices, layer the sautéed mushrooms and top with Swiss cheese.
- Place the other slices of bread on top, buttered side up.
Cook the Sandwiches
- In the same skillet, cook the sandwiches over medium heat for about 4-5 minutes per side, or until golden brown and the cheese is melted.
- Remove from skillet, slice in half, and serve warm.
