Ingredients
  

Mushroom Filling
  • 8 oz cremini mushrooms sliced
  • 1 tbsp olive oil for sautéing
  • 2 cloves garlic minced
  • 1 tsp thyme fresh or dried
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste
Sandwich Assembly
  • 8 slices sourdough bread or bread of choice
  • 8 oz Swiss cheese sliced
  • 4 tbsp butter softened for spreading

Method
 

Prepare the Mushroom Filling
  1. Heat olive oil in a skillet over medium heat. Add sliced mushrooms and sauté for about 5 minutes until they are browned.
  2. Add minced garlic, thyme, salt, and pepper. Cook for an additional 2-3 minutes until fragrant. Remove from heat.
Assemble the Sandwiches
  1. Spread softened butter on one side of each slice of bread.
  2. On the unbuttered side of four slices, layer the sautéed mushrooms and top with Swiss cheese.
  3. Place the other slices of bread on top, buttered side up.
Cook the Sandwiches
  1. In the same skillet, cook the sandwiches over medium heat for about 4-5 minutes per side, or until golden brown and the cheese is melted.
  2. Remove from skillet, slice in half, and serve warm.
