Ingredients
  

  • 2 medium sweet potatoes peeled and cubed
  • 1 can black beans 15 oz, drained and rinsed
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 cup rolled oats
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Method
 

  1. Cook sweet potatoes in salted water for about 15 minutes until tender. Drain and mash until smooth.
  2. In a large bowl, combine black beans, chopped onion, and minced garlic. Mash with a fork, leaving some beans whole for texture.
  3. Mix in the mashed sweet potatoes, oats, cumin, paprika, salt, and pepper until well combined.
  4. Shape the mixture into six patties and place them on a parchment-lined baking sheet.
  5. Bake at 400°F (200°C) for 20-25 minutes until golden brown or grill if preferred.
  6. Serve on buns or lettuce wraps with your choice of toppings.
