Prepare the Marinade
- In a bowl, mix sweet chili sauce, soy sauce, sesame oil, garlic powder, and ginger powder.
- Add chicken thighs to the marinade, ensuring they are well coated. Let marinate for at least 15 minutes.
Cook the Rice
- Rinse jasmine rice under cold water until the water runs clear.
- In a rice cooker, combine rinsed rice and water. Cook according to rice cooker instructions.
Cook the Chicken
- Heat a large skillet over medium-high heat. Add marinated chicken thighs.
- Cook for about 6-7 minutes on each side or until fully cooked and caramelized.
Prepare the Bowls
- Once the chicken is cooked, remove from skillet and let rest for a few minutes before slicing.
- In serving bowls, place a scoop of rice, top with sliced chicken, bell pepper, and carrot.
- Garnish with green onions and sesame seeds. Drizzle with extra sweet chili sauce if desired.
