Ingredients
  

Chicken and Marinade
  • 1.5 pounds boneless chicken thighs skinless preferred
  • 1/4 cup sweet chili sauce plus extra for serving
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
Rice and Vegetables
  • 2 cups jasmine rice
  • 4 cups water
  • 1 cup bell pepper sliced
  • 1 cup carrot julienned
  • 1 cup green onions sliced for garnish
  • 1 tablespoon sesame seeds for garnish

Method
 

Prepare the Marinade
  1. In a bowl, mix sweet chili sauce, soy sauce, sesame oil, garlic powder, and ginger powder.
  2. Add chicken thighs to the marinade, ensuring they are well coated. Let marinate for at least 15 minutes.
Cook the Rice
  1. Rinse jasmine rice under cold water until the water runs clear.
  2. In a rice cooker, combine rinsed rice and water. Cook according to rice cooker instructions.
Cook the Chicken
  1. Heat a large skillet over medium-high heat. Add marinated chicken thighs.
  2. Cook for about 6-7 minutes on each side or until fully cooked and caramelized.
Prepare the Bowls
  1. Once the chicken is cooked, remove from skillet and let rest for a few minutes before slicing.
  2. In serving bowls, place a scoop of rice, top with sliced chicken, bell pepper, and carrot.
  3. Garnish with green onions and sesame seeds. Drizzle with extra sweet chili sauce if desired.
