Method
Marinate the Pork
- In a mixing bowl, combine pork pieces with soy sauce and cornstarch. Mix well and let marinate for 15 minutes.
Prepare the Sauce
- In a separate bowl, mix ketchup, apple cider vinegar, brown sugar, and soy sauce. Set aside.
Cook the Pork
- Heat vegetable oil in a wok over medium-high heat. Add marinated pork and stir-fry until browned and cooked through, about 5-7 minutes. Remove and set aside.
Stir-Fry Vegetables
- In the same wok, add garlic, onion, bell peppers, and pineapple. Stir-fry for about 3-4 minutes until vegetables are tender.
Combine and Serve
- Return the cooked pork to the wok, pour in the sweet and sour sauce, and stir well. Cook for an additional 2-3 minutes until the sauce thickens. Serve hot over rice.
