Ingredients
  

Pork and Marinade
  • 1 lb pork tenderloin cut into bite-sized pieces
  • 2 tbsp soy sauce for marinating
  • 1 tbsp cornstarch for coating
  • 1 tbsp vegetable oil for frying
Vegetables
  • 1 cup bell peppers sliced (red and green)
  • 1 cup pineapple chunks canned or fresh
  • 1 medium onion sliced
  • 2 cloves garlic minced
Sweet and Sour Sauce
  • 1/2 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch mixed with 2 tbsp water

Method
 

Marinate the Pork
  1. In a mixing bowl, combine pork pieces with soy sauce and cornstarch. Mix well and let marinate for 15 minutes.
Prepare the Sauce
  1. In a separate bowl, mix ketchup, apple cider vinegar, brown sugar, and soy sauce. Set aside.
Cook the Pork
  1. Heat vegetable oil in a wok over medium-high heat. Add marinated pork and stir-fry until browned and cooked through, about 5-7 minutes. Remove and set aside.
Stir-Fry Vegetables
  1. In the same wok, add garlic, onion, bell peppers, and pineapple. Stir-fry for about 3-4 minutes until vegetables are tender.
Combine and Serve
  1. Return the cooked pork to the wok, pour in the sweet and sour sauce, and stir well. Cook for an additional 2-3 minutes until the sauce thickens. Serve hot over rice.
