Method
Prepare the Marinade
- In a mixing bowl, combine orange juice, soy sauce, honey, olive oil, minced garlic, grated ginger, and black pepper. Whisk until well blended.
- Reserve 1/4 cup of the marinade for basting later.
Marinate the Chicken
- Place the whole chicken in a large resealable plastic bag or a shallow dish.
- Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.
Roast the Chicken
- Preheat the oven to 375°F (190°C).
- Remove the chicken from the marinade and place it in a roasting pan. Discard the used marinade.
- Roast the chicken in the preheated oven for about 45 minutes, basting with the reserved marinade every 15 minutes, until the internal temperature reaches 165°F (74°C).
Serve
- Once cooked, remove the chicken from the oven and let it rest for 10 minutes.
- Garnish with orange slices and chopped parsley before carving and serving.
