Ingredients
  

Chicken
  • 4 pieces chicken thighs bone-in, skin-on
Marinade
  • 1 cup fresh orange juice about 4 oranges
  • 1/4 cup soy sauce low sodium preferred
  • 1/4 cup honey or maple syrup
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 teaspoon black pepper freshly ground
Garnish
  • 1 tablespoon fresh parsley chopped
  • 1 orange orange slices for serving

Method
 

Prepare the Marinade
  1. In a mixing bowl, whisk together the orange juice, soy sauce, honey, olive oil, garlic, ginger, and black pepper.
  2. Reserve 1/4 cup of the marinade for basting later.
Marinate the Chicken
  1. Place the chicken thighs in a large resealable bag or shallow dish.
  2. Pour the marinade over the chicken, ensuring it is well coated.
  3. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Roast the Chicken
  1. Preheat the oven to 400°F (200°C).
  2. Remove the chicken from the marinade and place it in a roasting pan, skin side up.
  3. Brush the chicken with the reserved marinade.
  4. Roast in the preheated oven for 35-45 minutes, or until the internal temperature reaches 165°F (75°C).
Serve
  1. Remove the chicken from the oven and let it rest for 5 minutes.
  2. Garnish with fresh parsley and orange slices before serving.
