Ingredients
  

Chicken and Marinade
  • 1 lb boneless chicken thighs cut into bite-sized pieces
  • 1/4 cup soy sauce low sodium preferred
  • 1/4 cup honey
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 1 tbsp sesame oil
Rice and Toppings
  • 2 cups jasmine rice or any preferred rice
  • 4 cups water
  • 1 cup broccoli florets steamed
  • 1 carrot carrot sliced
  • 1 cup green onions sliced
  • 1 tbsp sesame seeds for garnish

Method
 

Prepare the Rice
  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a rice cooker, combine the rinsed rice and water. Cook according to the rice cooker's instructions.
Make the Marinade
  1. In a mixing bowl, whisk together soy sauce, honey, minced garlic, grated ginger, and sesame oil.
Cook the Chicken
  1. In a large skillet over medium-high heat, add the chicken pieces and pour the marinade over them.
  2. Cook for about 10-15 minutes, stirring occasionally, until the chicken is cooked through and the sauce is sticky.
Assemble the Bowls
  1. Once the rice is cooked, divide it among four bowls.
  2. Top each bowl with the sticky chicken, steamed broccoli, sliced carrots, and green onions.
  3. Sprinkle sesame seeds on top for garnish.
