Salad Ingredients
  • 2 cups shredded cabbage green or purple cabbage
  • 1 cup julienned carrots
  • 1 cup cucumber sliced thinly
  • 1 cup red bell pepper sliced thinly
  • 1 cup fresh cilantro chopped
  • 1 cup fresh mint chopped
  • 1 cup sliced green onions
Peanut Dressing
  • 1/4 cup peanut butter smooth or crunchy
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon honey or maple syrup for vegan
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 tablespoons water to thin the dressing
  • 1 clove garlic minced
  • 1/2 teaspoon ginger grated

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the shredded cabbage, julienned carrots, cucumber, red bell pepper, cilantro, mint, and green onions.
  2. Toss the salad ingredients together until well mixed.
Make the Peanut Dressing
  1. In a separate bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, water, minced garlic, and grated ginger until smooth.
  2. Adjust the consistency with more water if needed.
Combine and Serve
  1. Drizzle the peanut dressing over the salad and toss to combine.
  2. Serve immediately or chill for a few minutes before serving.
