Ingredients
  

Salad Base
  • 8 cups fresh spinach washed and dried
  • 1 cup cherry tomatoes halved
  • 1 medium red onion thinly sliced
Toppings
  • 6 slices bacon cooked and crumbled
  • 4 large eggs hard-boiled and sliced
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced

Method
 

Prepare the Ingredients
  1. In a large bowl, combine the fresh spinach, halved cherry tomatoes, and sliced red onion.
  2. Cook the bacon in a frying pan over medium heat until crispy. Remove from the pan, crumble, and set aside.
  3. Place eggs in a pot, cover with water, and bring to a boil. Once boiling, cover and remove from heat. Let sit for 10 minutes, then cool, peel, and slice.
Make the Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined.
Assemble the Salad
  1. Drizzle the dressing over the salad base and toss gently to combine.
  2. Top the salad with crumbled bacon and sliced eggs.
