Ingredients
  

Stuffed Peppers
  • 4 pieces bell peppers any color, tops cut off and seeds removed
  • 1 cup ricotta cheese whole milk or part-skim
  • 2 cups fresh spinach chopped
  • 1 cup mozzarella cheese shredded
  • 1 tablespoon olive oil for sautéing
  • 1 clove garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup Parmesan cheese grated
Tomato Sauce
  • 1 cup tomato sauce store-bought or homemade
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Method
 

Prepare the Filling
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat.
  4. In a mixing bowl, combine ricotta cheese, sautéed spinach, mozzarella cheese, salt, black pepper, and Parmesan cheese. Mix well.
Stuff the Peppers
  1. Stuff each bell pepper with the spinach and ricotta mixture, pressing down gently to pack it in.
  2. Place the stuffed peppers upright in a baking dish.
Add Sauce and Bake
  1. In a small bowl, mix the tomato sauce with oregano and basil. Pour the sauce over the stuffed peppers.
  2. Cover the baking dish with foil and bake for 25 minutes.
  3. Remove the foil and bake for an additional 5 minutes until the tops are golden and bubbly.
Serve
  1. Let the peppers cool for a few minutes before serving. Enjoy your delicious stuffed peppers!
