Spinach Artichoke Mac and Cheese

Ingredients
  

Pasta
  • 8 oz Elbow Macaroni or any pasta of choice
Cheese Sauce
  • 2 tbsp Butter unsalted
  • 2 tbsp All-Purpose Flour
  • 2 cups Milk whole or 2%
  • 1 cup Cream Cheese softened
  • 1 cup Shredded Mozzarella Cheese
  • 1 cup Grated Parmesan Cheese
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Salt to taste
  • 1/4 tsp Black Pepper to taste
Vegetables
  • 1 cup Frozen Spinach thawed and drained
  • 1 cup Canned Artichoke Hearts drained and chopped
Topping
  • 1/2 cup Breadcrumbs
  • 2 tbsp Olive Oil for drizzling
  • 1/4 cup Grated Parmesan Cheese for topping

Method
 

Cook Pasta
  1. In a large pot, bring salted water to a boil. Add the macaroni and cook according to package instructions until al dente. Drain and set aside.
Make Cheese Sauce
  1. In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until lightly golden.
  2. Gradually whisk in the milk, stirring constantly until the mixture thickens.
  3. Add the cream cheese, mozzarella, parmesan, garlic powder, onion powder, salt, and pepper. Stir until smooth and creamy.
Combine Ingredients
  1. In a large bowl, combine the cooked pasta, cheese sauce, spinach, and artichokes. Mix well until everything is coated.
Bake
  1. Preheat the oven to 350°F (175°C). Transfer the mixture to a greased baking dish.
  2. In a small bowl, mix the breadcrumbs with olive oil and sprinkle over the top. Add additional parmesan cheese if desired.
  3. Bake for 20-25 minutes until the top is golden and bubbly.
Serve
  1. Remove from the oven and let cool for a few minutes before serving. Enjoy your Spinach Artichoke Mac and Cheese!
