Ingredients
  

Pasta
  • 8 oz elbow macaroni
Cheese Sauce
  • 2 tbsp butter unsalted
  • 2 tbsp all-purpose flour
  • 2 cups milk whole or 2%
  • 1 cup cream cheese softened
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
Vegetables
  • 1 cup fresh spinach chopped
  • 1 cup canned artichoke hearts drained and chopped

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Make Cheese Sauce
  1. In a large skillet, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until golden.
  2. Gradually whisk in the milk, stirring constantly until the mixture thickens, about 5-7 minutes.
  3. Add the cream cheese, mozzarella, cheddar, Parmesan, garlic powder, onion powder, salt, and pepper. Stir until the cheeses are melted and the sauce is smooth.
Combine Ingredients
  1. Add the cooked macaroni, chopped spinach, and artichokes to the cheese sauce. Stir until well combined.
Bake
  1. Preheat the oven to 350°F (175°C). Transfer the mixture to a baking dish and spread evenly. Bake for 20 minutes until bubbly and golden on top.
Serve
  1. Remove from the oven and let cool for a few minutes before serving. Enjoy your Spinach Artichoke Mac and Cheese!
