Ingredients
  

Chicken and Base
  • 1 lb boneless, skinless chicken breasts diced
  • 4 cups chicken broth
  • 1 cup cream cheese softened
  • 1 cup heavy cream
Vegetables and Spices
  • 1 cup jalapeños diced, seeds removed for less heat
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Toppings
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro chopped
  • 1/2 cup sour cream

Method
 

Prepare the Chicken
  1. In a large pot, add the diced chicken and cook over medium heat until browned and cooked through, about 5-7 minutes.
  2. Remove the chicken from the pot and set aside.
Cook the Vegetables
  1. In the same pot, add the diced onion and jalapeños. Sauté for 3-4 minutes until softened.
  2. Add the minced garlic, cumin, smoked paprika, salt, and pepper. Cook for an additional 1-2 minutes until fragrant.
Combine Ingredients
  1. Pour in the chicken broth and bring to a simmer.
  2. Add the cooked chicken back into the pot along with the cream cheese and heavy cream. Stir until the cream cheese is fully melted and combined.
Serve
  1. Ladle the soup into bowls and top with shredded cheddar cheese, cilantro, and a dollop of sour cream.
