Ingredients
  

  • 1.5 lbs beef flank steak, sliced thin
  • 2 cups bell peppers (1 red, 1 green), sliced
  • 1 large yellow onion, sliced
  • 4 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1 cup beef broth
  • 2 tbsp brown sugar
  • 2 tbsp cornstarch

Method
 

  1. Slice the beef flank steak against the grain into thin strips.
  2. In a bowl, whisk together soy sauce, beef broth, minced garlic, brown sugar, and cornstarch until smooth.
  3. Layer sliced beef in the slow cooker followed by bell peppers and onions. Pour the sauce evenly over the top.
  4. Set the slow cooker on low for 6 hours or high for 3 hours.
  5. Once cooked, stir gently and serve over rice or noodles. Garnish with green onions if desired.
