Method
Prepare the Vegetables
- In a skillet, heat olive oil over medium heat. Add diced onion, bell pepper, and celery. Sauté until softened, about 5 minutes.
- Stir in minced garlic and cook for an additional minute until fragrant.
Combine Ingredients in Slow Cooker
- Transfer the sautéed vegetables to the slow cooker.
- Add soaked red beans, vegetable broth, Cajun seasoning, thyme, bay leaf, black pepper, and salt. Stir to combine.
Cook the Dish
- Cover and cook on low for 8 hours or on high for 4 hours, until beans are tender.
- About 30 minutes before serving, stir in the rinsed rice.
Serve
- Remove bay leaf before serving. Serve hot, garnished with green onions if desired.

This dish can be made vegetarian by using vegetable broth. Adjust the spice level by adding more or less Cajun seasoning.
