Cook Chicken
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper. Add chicken to the skillet and cook for 6-7 minutes on each side until golden brown and cooked through. Remove chicken from skillet and set aside.
Prepare Mushroom Sauce
- In the same skillet, add butter and let it melt. Add sliced mushrooms and cook for about 5 minutes until they are browned and tender.
- Add minced garlic and thyme, cooking for an additional minute until fragrant.
- Pour in the white wine and chicken broth, scraping the bottom of the skillet to deglaze. Bring to a simmer and let it reduce by half, about 5-7 minutes.
Combine and Serve
- Return the chicken to the skillet, spooning the sauce over the chicken. Cook for another 2-3 minutes until heated through.
- Serve hot, garnished with fresh herbs if desired.
