Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts about 6 oz each
Mushrooms
  • 8 oz cremini mushrooms sliced
Wine Sauce
  • 1 cup dry white wine such as Sauvignon Blanc
  • 1 cup chicken broth low sodium
  • 2 tbsp olive oil for cooking
  • 2 tbsp butter unsalted
  • 2 cloves garlic minced
  • 1 tsp thyme dried or fresh
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Cook Chicken
  1. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper. Add chicken to the skillet and cook for 6-7 minutes on each side until golden brown and cooked through. Remove chicken from skillet and set aside.
Prepare Mushroom Sauce
  1. In the same skillet, add butter and let it melt. Add sliced mushrooms and cook for about 5 minutes until they are browned and tender.
  2. Add minced garlic and thyme, cooking for an additional minute until fragrant.
  3. Pour in the white wine and chicken broth, scraping the bottom of the skillet to deglaze. Bring to a simmer and let it reduce by half, about 5-7 minutes.
Combine and Serve
  1. Return the chicken to the skillet, spooning the sauce over the chicken. Cook for another 2-3 minutes until heated through.
  2. Serve hot, garnished with fresh herbs if desired.
