Vegetables
  • 4 medium Zucchini sliced
  • 1 cup Onion chopped
  • 1 cup Bell Pepper chopped
Dairy
  • 1 cup Sour Cream or Greek yogurt
  • 1 cup Shredded Cheese cheddar or mozzarella
Herbs and Spices
  • 2 tablespoons Fresh Dill chopped
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
Others
  • 1 cup Breadcrumbs for topping
  • 2 tablespoons Olive Oil for greasing

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the sliced zucchini, chopped onion, and bell pepper.
  3. Add the sour cream, shredded cheese, dill, garlic powder, salt, and pepper to the vegetables and mix well.
Assembly
  1. Grease a casserole dish with olive oil.
  2. Pour the vegetable mixture into the prepared casserole dish and spread evenly.
  3. Sprinkle breadcrumbs evenly over the top of the casserole.
Baking
  1. Bake in the preheated oven for 30 minutes or until the top is golden brown and the vegetables are tender.
  2. Remove from the oven and let it cool for a few minutes before serving.
