Ingredients
  

Chicken Shawarma
  • 1.5 pounds boneless chicken thighs skinless
  • 2 tablespoons olive oil for marinating
  • 2 teaspoons ground cumin
  • 2 teaspoons ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 lemon juiced
Creamy Garlic Sauce
  • 1 cup Greek yogurt
  • 4 cloves garlic minced
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
To Serve
  • 4 pitas or flatbreads
  • 1 cup fresh vegetables such as lettuce, tomatoes, and cucumbers
  • 1 cup pickles

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine olive oil, cumin, paprika, turmeric, cinnamon, garlic powder, salt, black pepper, and lemon juice. Add the chicken thighs and coat evenly. Marinate for at least 30 minutes, or overnight for best results.
  2. Preheat the grill to medium-high heat.
Cook the Chicken
  1. Grill the marinated chicken thighs for about 5-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
  2. Remove from the grill and let rest for 5 minutes before slicing.
Make the Creamy Garlic Sauce
  1. In a mixing bowl, whisk together Greek yogurt, minced garlic, lemon juice, olive oil, salt, and black pepper until smooth and creamy.
Assemble the Shawarma
  1. Slice the grilled chicken and serve in pitas or flatbreads with fresh vegetables, pickles, and a generous drizzle of creamy garlic sauce.
