Method
Prepare the Brioche Dough
- In a mixing bowl, combine warm milk, sugar, and yeast. Let it sit for 5 minutes until frothy.
- In a stand mixer, combine flour and salt. Add the yeast mixture, softened butter, and eggs. Mix until a dough forms.
- Knead the dough for about 10 minutes until smooth and elastic. Place in a greased bowl, cover with a towel, and let rise for 1 hour or until doubled in size.
Shape and Bake the Rolls
- Preheat the oven to 375°F (190°C). Punch down the risen dough and divide it into 12 equal pieces.
- Shape each piece into a ball and place on a baking sheet lined with parchment paper. Cover and let rise for another 30 minutes.
- Bake in the preheated oven for 20 minutes or until golden brown. Remove from oven and let cool slightly.
Make the Honey Butter
- In a small bowl, mix softened butter, honey, chopped sage, and sea salt until well combined.
- Serve the warm brioche rolls with the sage honey butter spread on top.
