Ingredients
  

Brioche Dough
  • 4 cups all-purpose flour plus extra for dusting
  • 1 cup whole milk warm
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter softened
  • 3 large eggs
  • 2 1/4 teaspoons active dry yeast
  • 1 teaspoon salt
Honey Butter
  • 1/2 cup unsalted butter softened
  • 1/4 cup honey
  • 1 teaspoon fresh sage finely chopped
  • 1/2 teaspoon sea salt

Method
 

Prepare the Brioche Dough
  1. In a mixing bowl, combine warm milk, sugar, and yeast. Let it sit for 5 minutes until frothy.
  2. In a stand mixer, combine flour and salt. Add the yeast mixture, softened butter, and eggs. Mix until a dough forms.
  3. Knead the dough for about 10 minutes until smooth and elastic. Place in a greased bowl, cover with a towel, and let rise for 1 hour or until doubled in size.
Shape and Bake the Rolls
  1. Preheat the oven to 375°F (190°C). Punch down the risen dough and divide it into 12 equal pieces.
  2. Shape each piece into a ball and place on a baking sheet lined with parchment paper. Cover and let rise for another 30 minutes.
  3. Bake in the preheated oven for 20 minutes or until golden brown. Remove from oven and let cool slightly.
Make the Honey Butter
  1. In a small bowl, mix softened butter, honey, chopped sage, and sea salt until well combined.
  2. Serve the warm brioche rolls with the sage honey butter spread on top.
