Ingredients
  

  • 1 pound fresh salmon fillets
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 2 tablespoons pickles, finely chopped
  • 1 teaspoon Dijon mustard

Method
 

  1. Finely chop the salmon fillets or pulse them in a food processor until chunky.
  2. In a bowl, mix chopped salmon, breadcrumbs, egg, herbs, lemon juice, salt, and pepper until combined.
  3. Shape the mixture into four patties about one inch thick.
  4. Heat olive oil in a skillet over medium heat. Cook patties for about 4 minutes on each side until golden brown.
  5. For the tartar sauce, combine mayonnaise, pickles, and Dijon mustard in a bowl; mix well.
  6. Serve the salmon burgers on toasted buns with tartar sauce and your choice of toppings.
