- Finely chop the salmon fillets or pulse them in a food processor until chunky.
- In a bowl, mix chopped salmon, breadcrumbs, egg, herbs, lemon juice, salt, and pepper until combined.
- Shape the mixture into four patties about one inch thick.
- Heat olive oil in a skillet over medium heat. Cook patties for about 4 minutes on each side until golden brown.
- For the tartar sauce, combine mayonnaise, pickles, and Dijon mustard in a bowl; mix well.
- Serve the salmon burgers on toasted buns with tartar sauce and your choice of toppings.
