Prepare the Chicken

- Using a meat mallet, gently pound the chicken breasts to an even thickness.

- In a mixing bowl, combine the chopped spinach, feta cheese, sun-dried tomatoes, garlic powder, salt, and pepper.
Stuff the Chicken
- Place a portion of the filling on each chicken breast and roll them up tightly.
- Secure each roll with toothpicks.
Bake the Chicken
- Place the rolled chicken in a baking dish and drizzle with olive oil.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and no longer pink inside.

- Remove toothpicks before serving and garnish with fresh parsley if desired.
