Ingredients
  

Chicken and Filling
  • 4 pieces chicken breasts boneless and skinless
  • 1 cup fresh spinach chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup sun-dried tomatoes chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon olive oil for drizzling
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Optional Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Chicken
  1. Preheat the oven to 375°F (190°C).
  2. Using a meat mallet, gently pound the chicken breasts to an even thickness.
Make the Filling
  1. In a mixing bowl, combine the chopped spinach, feta cheese, sun-dried tomatoes, garlic powder, salt, and pepper.
Stuff the Chicken
  1. Place a portion of the filling on each chicken breast and roll them up tightly.
  2. Secure each roll with toothpicks.
Bake the Chicken
  1. Place the rolled chicken in a baking dish and drizzle with olive oil.
  2. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and no longer pink inside.
Serve
  1. Remove toothpicks before serving and garnish with fresh parsley if desired.
