- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- Spread the pitted and halved cherries on a baking sheet lined with parchment paper. Roast for about 15 minutes until soft.
- In a mixing bowl, combine melted butter, granulated sugar, and brown sugar until smooth. Add eggs one at a time along with vanilla extract.
- In another bowl, whisk together cocoa powder, flour, and salt. Gradually mix into the wet ingredients until just combined.
- Gently fold in the roasted cherries. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool before slicing into squares.
