Ingredients
  

  • 1 cup fresh cherries pitted and halved
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 tsp vanilla extract
  • pinch of salt

Method
 

  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. Spread the pitted and halved cherries on a baking sheet lined with parchment paper. Roast for about 15 minutes until soft.
  3. In a mixing bowl, combine melted butter, granulated sugar, and brown sugar until smooth. Add eggs one at a time along with vanilla extract.
  4. In another bowl, whisk together cocoa powder, flour, and salt. Gradually mix into the wet ingredients until just combined.
  5. Gently fold in the roasted cherries. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Let cool before slicing into squares.
