Ingredients
  

Cookie Base
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 tablespoon cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare the Cookie Base
  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg, red food coloring, and vanilla extract, mixing well.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Spread the cookie dough evenly in the prepared baking pan.
  7. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
Make the Frosting
  1. While the cookie bars are baking, prepare the cream cheese frosting.
  2. In a mixing bowl, beat together the softened cream cheese and butter until smooth.
  3. Gradually add the powdered sugar and vanilla extract, mixing until creamy.
  4. Once the cookie bars are completely cooled, spread the cream cheese frosting evenly over the top.
Serve
  1. Cut the cookie bars into squares and serve.
