Ingredients
  

Dough
  • 1 cup almond flour
  • 1/2 cup oats ground into flour
  • 1/4 cup coconut oil melted
  • 1 large egg beaten
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
Filling
  • 1/2 cup protein powder vanilla or chocolate flavor
  • 1/4 cup almond milk or any milk of choice
  • 1/4 cup fruit jam strawberry or raspberry
Topping
  • 1/2 cup powdered sugar
  • 1 tablespoon almond milk to thin
  • 1/2 teaspoon vanilla extract

Method
 

Prepare the Dough
  1. In a mixing bowl, combine almond flour, oat flour, melted coconut oil, beaten egg, honey, vanilla extract, salt, and baking powder. Mix until a dough forms.
  2. Wrap the dough in plastic wrap and refrigerate for 15 minutes.
Make the Filling
  1. In another bowl, mix the protein powder and almond milk until smooth. Set aside.
  2. Spread a thin layer of fruit jam on one half of the dough after rolling it out.
Assemble the Pop Tarts
  1. Roll out the chilled dough on a floured surface to about 1/8 inch thick.
  2. Cut the dough into rectangles and place the filling on half of each rectangle.
  3. Fold the other half over and seal the edges with a fork.
Bake the Pop Tarts
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Place the assembled pop tarts on the baking sheet and bake for 15 minutes or until golden brown.
Prepare the Topping
  1. In a small bowl, mix powdered sugar, almond milk, and vanilla extract until smooth. Drizzle over cooled pop tarts.

Notes
