Method
Prepare the Dough
- In a mixing bowl, combine almond flour, oat flour, melted coconut oil, beaten egg, honey, vanilla extract, salt, and baking powder. Mix until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for 15 minutes.
Make the Filling
- In another bowl, mix the protein powder and almond milk until smooth. Set aside.
- Spread a thin layer of fruit jam on one half of the dough after rolling it out.
Assemble the Pop Tarts
- Roll out the chilled dough on a floured surface to about 1/8 inch thick.
- Cut the dough into rectangles and place the filling on half of each rectangle.
- Fold the other half over and seal the edges with a fork.
Bake the Pop Tarts
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Place the assembled pop tarts on the baking sheet and bake for 15 minutes or until golden brown.
Prepare the Topping
- In a small bowl, mix powdered sugar, almond milk, and vanilla extract until smooth. Drizzle over cooled pop tarts.
