Ingredients
  

Mushrooms
  • 2 large Portabella mushrooms cleaned and gills removed
Grain
  • 1 cup cooked quinoa fluffy and cooled
Breading
  • 1/2 cup whole wheat breadcrumbs
Aromatics
  • 2 cloves fresh garlic minced
  • 1/4 cup onion finely chopped
Binding Agent
  • 1 large egg or 1 flax egg
Spices
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
Buns and Toppings
  • Burger buns of choice
  • Toppings lettuce, tomato, avocado

Method
 

Preparation and Cooking
  1. Clean the Portabella mushrooms with a damp cloth and remove stems and gills.
  2. Sauté onions and minced garlic in olive oil over medium heat until soft.
  3. In a bowl, mix cooked quinoa, sautéed onions and garlic, breadcrumbs, spices, and the egg until well combined.
  4. Shape the mixture into patties.
  5. Heat olive oil in a skillet or grill; cook each patty for about 4 minutes per side until golden brown.
  6. Serve on buns with preferred toppings.
