Ingredients
  

Cottage Cheese Base
  • 2 cups cottage cheese preferably low-fat
  • 1 cup shredded mozzarella cheese for topping
  • 1 large egg beaten
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
Vegetable Toppings
  • 1 cup bell pepper diced
  • 1 cup spinach fresh or frozen
  • 1 cup mushrooms sliced
  • 1/2 cup black olives sliced
Sauce
  • 1 cup pizza sauce store-bought or homemade

Method
 

Prepare the Oven
  1. Preheat the oven to 375°F (190°C).
Mix the Cottage Cheese Base
  1. In a mixing bowl, combine cottage cheese, beaten egg, Italian seasoning, and garlic powder. Mix well.
Layer the Ingredients
  1. Spread half of the pizza sauce on the bottom of a baking dish.
  2. Layer the cottage cheese mixture on top, followed by the diced bell pepper, spinach, mushrooms, and black olives.
  3. Top with the remaining pizza sauce and sprinkle shredded mozzarella cheese on top.
Bake the Dish
  1. Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove from the oven and let it cool for a few minutes before slicing and serving.
