Pineapple Chicken and Rice

Ingredients
  

Chicken and Marinade
  • 1 lb boneless chicken breasts cut into bite-sized pieces
  • 1/4 cup soy sauce low sodium preferred
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
Vegetables and Rice
  • 1 cup uncooked jasmine rice
  • 1 cup pineapple chunks fresh or canned
  • 1 cup bell pepper diced
  • 1 cup snap peas trimmed
  • 2 tbsp vegetable oil
Seasoning
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 tbsp sesame oil
  • 1/4 tsp black pepper

Method
 

Marinate the Chicken
  1. In a bowl, combine soy sauce, honey, rice vinegar, and cornstarch. Add chicken pieces and mix well. Let marinate for 15 minutes.
Cook the Rice
  1. In a pot, cook jasmine rice according to package instructions. Set aside once done.
Stir-Fry the Chicken
  1. Heat vegetable oil in a large skillet over medium-high heat. Add marinated chicken and stir-fry for about 5-7 minutes until cooked through.
Add Vegetables and Pineapple
  1. Add garlic, ginger, bell pepper, snap peas, and pineapple to the skillet. Stir-fry for another 5 minutes until vegetables are tender.
Combine with Rice
  1. Add cooked rice to the skillet and drizzle with sesame oil. Toss everything together and cook for an additional 2-3 minutes.
Serve
  1. Serve hot, garnished with green onions if desired.

Notes
