Method
Marinate the Chicken
- In a bowl, combine soy sauce, honey, rice vinegar, and cornstarch. Add chicken pieces and mix well. Let marinate for 15 minutes.
Cook the Rice
- In a pot, cook jasmine rice according to package instructions. Set aside once done.
Stir-Fry the Chicken
- Heat vegetable oil in a large skillet over medium-high heat. Add marinated chicken and stir-fry for about 5-7 minutes until cooked through.
Add Vegetables and Pineapple
- Add garlic, ginger, bell pepper, snap peas, and pineapple to the skillet. Stir-fry for another 5 minutes until vegetables are tender.
Combine with Rice
- Add cooked rice to the skillet and drizzle with sesame oil. Toss everything together and cook for an additional 2-3 minutes.
Serve
- Serve hot, garnished with green onions if desired.
