Ingredients
  

Pasta and Meat
  • 8 oz penne pasta or any pasta of choice
  • 1 lb thinly sliced beef ribeye or sirloin recommended
  • 1 tbsp olive oil for cooking beef
Vegetables
  • 1 medium onion sliced
  • 1 medium green bell pepper sliced
  • 1 medium mushroom sliced
Sauce and Cheese
  • 2 cups beef broth low sodium
  • 1 cup heavy cream
  • 1 cup shredded provolone cheese or mozzarella
  • 1 cup shredded cheddar cheese
Seasoning
  • 1 tsp garlic powder
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste

Method
 

Cook Pasta
  1. In a large pot, bring salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In the same pot, add the beef broth and heavy cream, stirring to combine.
Cook Beef and Vegetables
  1. In a skillet, heat olive oil over medium-high heat. Add the sliced beef and cook until browned, about 5-7 minutes.
  2. Add the sliced onion, bell pepper, and mushrooms to the skillet. Cook until the vegetables are tender, about 5 minutes.
Combine and Serve
  1. Add the cooked pasta to the skillet with the beef and vegetables. Pour the broth and cream mixture over the pasta and stir to combine.
  2. Stir in the garlic powder, salt, and pepper. Cook for an additional 2-3 minutes until heated through.
  3. Remove from heat and stir in the provolone and cheddar cheese until melted. Serve hot.
