Pesto Chicken Flatbread

Ingredients
  

Chicken and Toppings
  • 2 cups Cooked Chicken Breast Shredded or sliced
  • 1 cup Pesto Sauce Store-bought or homemade
  • 1 cup Mozzarella Cheese Shredded
  • 1 cup Cherry Tomatoes Halved
  • 1 tablespoon Olive Oil For drizzling
  • 1 teaspoon Salt To taste
  • 1 teaspoon Black Pepper To taste
Flatbread
  • 4 pieces Flatbread Store-bought or homemade

Method
 

Prepare the Chicken
  1. Preheat the grill or grill pan over medium heat.
  2. Season the cooked chicken with salt and pepper.
  3. Grill the chicken for about 5-7 minutes until heated through, then remove from heat.
Assemble the Flatbreads
  1. Preheat the oven to 400°F (200°C).
  2. Place the flatbreads on a baking sheet.
  3. Spread a generous amount of pesto sauce on each flatbread.
  4. Top with grilled chicken, mozzarella cheese, and cherry tomatoes.
Bake the Flatbreads
  1. Drizzle olive oil over the top of the flatbreads.
  2. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  3. Remove from the oven and let cool for a few minutes before slicing.
