Ingredients
  

  • 1 lb sirloin steak, thinly sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 1 cup beef broth
  • 2 tsp cornstarch mixed with water
  • 2 tbsp olive oil
  • black pepper to taste

Method
 

  1. Thinly slice the sirloin steak against the grain. Chop the bell peppers and onion into bite-sized pieces and mince the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the steak for about 3 minutes on each side until browned. Remove from skillet and set aside.
  3. In the same skillet, add more oil if needed and sauté bell peppers and onion for about 5 minutes until softened. Add minced garlic and cook for an additional minute.
  4. Return the steak to the skillet, pour in soy sauce and beef broth, then bring to a gentle simmer.
  5. Stir in the cornstarch mixture until the sauce thickens. Adjust seasoning as needed.
  6. Serve hot with steamed rice or noodles.
