- Thinly slice the sirloin steak against the grain. Chop the bell peppers and onion into bite-sized pieces and mince the garlic.
- Heat olive oil in a large skillet over medium-high heat. Sear the steak for about 3 minutes on each side until browned. Remove from skillet and set aside.
- In the same skillet, add more oil if needed and sauté bell peppers and onion for about 5 minutes until softened. Add minced garlic and cook for an additional minute.
- Return the steak to the skillet, pour in soy sauce and beef broth, then bring to a gentle simmer.
- Stir in the cornstarch mixture until the sauce thickens. Adjust seasoning as needed.
- Serve hot with steamed rice or noodles.
