Ingredients
  

  • 1 lb flank steak sliced against the grain
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 1/4 cup low-sodium soy sauce
  • 1 cup beef broth
  • 2 tbsp cornstarch
  • freshly cracked black pepper to taste

Method
 

  1. Slice flank steak against the grain into thin strips.
  2. Prepare bell peppers and onion by cutting them into strips.
  3. Marinate steak strips in a bowl with soy sauce and minced garlic for at least 15 minutes.
  4. Heat oil in a large skillet over medium-high heat.
  5. Add marinated steak in batches and sear until browned (about 3 minutes).
  6. Add sliced onions and bell peppers to the skillet; cook until tender-crisp (approximately 5 minutes).
  7. In a small bowl, mix beef broth with cornstarch until smooth.
  8. Pour over skillet contents and stir until thickened (about 3 minutes).
  9. Serve hot over rice or noodles, drizzling any remaining sauce on top.
