Method
Cook the Salmon
- Season the salmon fillets with salt and black pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat.
- Add the salmon fillets to the skillet, skin-side down, and cook for about 4-5 minutes until golden brown.
- Flip the salmon and cook for an additional 3-4 minutes until cooked through. Remove from skillet and set aside.
Prepare the Orzo
- In the same skillet, add butter and minced garlic, sauté for 1 minute until fragrant.
- Add the orzo and toast for 2 minutes, stirring frequently.
- Pour in the chicken broth, lemon zest, and lemon juice. Bring to a boil.
- Reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender and liquid is absorbed.
- Stir in the chopped spinach and mix until wilted.
Combine and Serve
- Return the cooked salmon to the skillet on top of the orzo.
- Cover and let sit for 2 minutes to heat through.
- Serve warm, garnished with additional lemon slices if desired.
