One Skillet Salmon with Lemon Orzo

Ingredients
  

For the Salmon
  • 4 fillets salmon skin-on or skinless
  • 1 teaspoon salt divided
  • 1 teaspoon black pepper divided
  • 2 tablespoons olive oil
For the Orzo
  • 1 cup orzo
  • 2 cups chicken broth or vegetable broth
  • 1 lemon zest
  • 2 tablespoons lemon juice
  • 1 cup spinach fresh, chopped
  • 1 clove garlic minced
  • 1 tablespoon butter

Method
 

Cook the Salmon
  1. Season the salmon fillets with salt and black pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the salmon fillets to the skillet, skin-side down, and cook for about 4-5 minutes until golden brown.
  4. Flip the salmon and cook for an additional 3-4 minutes until cooked through. Remove from skillet and set aside.
Prepare the Orzo
  1. In the same skillet, add butter and minced garlic, sauté for 1 minute until fragrant.
  2. Add the orzo and toast for 2 minutes, stirring frequently.
  3. Pour in the chicken broth, lemon zest, and lemon juice. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender and liquid is absorbed.
  5. Stir in the chopped spinach and mix until wilted.
Combine and Serve
  1. Return the cooked salmon to the skillet on top of the orzo.
  2. Cover and let sit for 2 minutes to heat through.
  3. Serve warm, garnished with additional lemon slices if desired.
