Method
Cook Chicken
- In a large pot, heat olive oil over medium heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
- Remove the chicken from the pot and set aside.
Prepare Sauce
- In the same pot, melt 2 tablespoons of butter. Add minced garlic and red pepper flakes, sauté for about 1 minute until fragrant.
- Stir in the chicken broth and bring to a simmer.
Cook Tortellini
- Add the tortellini to the pot and cook according to package instructions, usually about 3-5 minutes.
- Once cooked, return the chicken to the pot.
Finish the Dish
- Stir in the remaining butter, Italian seasoning, spinach, and parmesan cheese. Cook until the spinach is wilted and everything is well combined.
- Remove from heat and garnish with fresh parsley before serving.

Notes
For extra heat, increase the amount of red pepper flakes. This dish can be served with a side salad or garlic bread.
