One-Pot Spicy Garlic Butter Chicken Tortellini

Ingredients
  

Chicken and Tortellini
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 12 oz cheese tortellini fresh or frozen
  • 2 cups chicken broth low-sodium preferred
  • 1 tbsp olive oil
Spicy Garlic Butter Sauce
  • 4 tbsp unsalted butter divided
  • 4 cloves garlic minced
  • 1 tsp red pepper flakes adjust to taste
  • 1 tsp Italian seasoning
  • 1 cup spinach fresh, roughly chopped
  • 1 cup parmesan cheese grated
Garnish
  • 2 tbsp fresh parsley chopped

Method
 

Cook Chicken
  1. In a large pot, heat olive oil over medium heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  2. Remove the chicken from the pot and set aside.
Prepare Sauce
  1. In the same pot, melt 2 tablespoons of butter. Add minced garlic and red pepper flakes, sauté for about 1 minute until fragrant.
  2. Stir in the chicken broth and bring to a simmer.
Cook Tortellini
  1. Add the tortellini to the pot and cook according to package instructions, usually about 3-5 minutes.
  2. Once cooked, return the chicken to the pot.
Finish the Dish
  1. Stir in the remaining butter, Italian seasoning, spinach, and parmesan cheese. Cook until the spinach is wilted and everything is well combined.
  2. Remove from heat and garnish with fresh parsley before serving.

Notes
