One-Pot Creamy Cajun Meatball Pasta

Ingredients
  

Meatballs
  • 1 pound ground beef or ground turkey
  • 1/2 cup bread crumbs preferably Italian seasoned
  • 1 large egg
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Pasta and Sauce
  • 8 ounces penne pasta
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese like Parmesan or cheddar
  • 1 teaspoon Cajun seasoning for sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare Meatballs
  1. In a mixing bowl, combine ground beef, bread crumbs, egg, Cajun seasoning, salt, and pepper. Mix until well combined.
  2. Form the mixture into small meatballs, about 1 inch in diameter.
Cook Meatballs
  1. In a large pot, heat olive oil over medium heat. Add meatballs and cook until browned on all sides, about 5-7 minutes. Remove and set aside.
Make Sauce
  1. In the same pot, add diced onion and garlic. Sauté until softened, about 3-4 minutes.
  2. Add diced tomatoes, chicken broth, and Cajun seasoning. Bring to a boil.
  3. Stir in penne pasta and return to a boil. Reduce heat, cover, and simmer for 10-12 minutes or until pasta is cooked.
Combine and Serve
  1. Return meatballs to the pot, add heavy cream and shredded cheese. Stir until cheese is melted and sauce is creamy.
  2. Serve hot, garnished with additional cheese if desired.

Notes
