Method
Prepare Meatballs
- In a mixing bowl, combine ground beef, bread crumbs, egg, Cajun seasoning, salt, and pepper. Mix until well combined.
- Form the mixture into small meatballs, about 1 inch in diameter.
Cook Meatballs
- In a large pot, heat olive oil over medium heat. Add meatballs and cook until browned on all sides, about 5-7 minutes. Remove and set aside.
Make Sauce
- In the same pot, add diced onion and garlic. Sauté until softened, about 3-4 minutes.
- Add diced tomatoes, chicken broth, and Cajun seasoning. Bring to a boil.
- Stir in penne pasta and return to a boil. Reduce heat, cover, and simmer for 10-12 minutes or until pasta is cooked.
Combine and Serve
- Return meatballs to the pot, add heavy cream and shredded cheese. Stir until cheese is melted and sauce is creamy.
- Serve hot, garnished with additional cheese if desired.
