Method
Cook the Shrimp
- In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Add the shrimp, oregano, salt, and pepper. Cook until the shrimp turn pink, about 3-4 minutes. Remove shrimp from the skillet and set aside.
Prepare the Orzo
- In the same skillet, add the chicken broth and bring to a boil.
- Stir in the orzo and reduce heat to a simmer. Cook uncovered, stirring occasionally, until the orzo is al dente and most of the liquid is absorbed, about 10-12 minutes.
Combine and Serve
- Once the orzo is cooked, stir in the cooked shrimp and Parmesan cheese. Mix well until the cheese is melted and everything is combined.
- Garnish with fresh parsley and serve immediately.
