Chicken and Pineapple Filling
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup fresh pineapple diced
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Taco Toppings
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Cook Chicken and Pineapple
  1. Heat olive oil in a large skillet over medium heat. Add the chicken pieces and season with cumin, chili powder, garlic powder, salt, and pepper. Cook for about 5-7 minutes until the chicken is browned and cooked through.
  2. Add the diced pineapple to the skillet and cook for an additional 3-5 minutes until the pineapple is heated through and slightly caramelized.
Assemble Tacos
  1. Warm the corn tortillas in a dry skillet or microwave until pliable.
  2. Spoon the chicken and pineapple mixture onto each tortilla. Top with shredded lettuce, diced tomatoes, sour cream, and chopped cilantro.
  3. Serve with lime wedges on the side.
