Ingredients
  

Salad Base
  • 2 cups sauerkraut drained and rinsed
  • 1 cup shredded carrots fresh or pre-packaged
  • 1 cup diced bell pepper any color
Dressing
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sugar optional
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
Garnish
  • 1/4 cup chopped fresh parsley for garnish

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the sauerkraut, shredded carrots, and diced bell pepper.
  2. In a separate bowl, whisk together the olive oil, apple cider vinegar, sugar, salt, and black pepper until well combined.
  3. Pour the dressing over the salad mixture and toss until everything is evenly coated.
  4. Let the salad sit for at least 10 minutes to allow the flavors to meld.
  5. Before serving, garnish with chopped fresh parsley.
