Ingredients
  

Marinade and Steak
  • 1 lb flank or sirloin steak
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic minced
  • 2 tbsp freshly squeezed lemon juice
Vegetables and Toppings
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 small red onion thinly sliced
  • ½ cup crumbled feta cheese
  • ½ cup pitted Kalamata olives
Tahini Sauce
  • ¼ cup tahini
  • Water to desired consistency

Method
 

Marinating the Steak
  1. Combine olive oil, minced garlic, lemon juice, salt, and pepper in a bowl. Add steak and marinate for at least 30 minutes.
Grilling and Preparing
  1. Preheat grill to medium-high heat. Grill steak for about 6 minutes per side for medium-rare. Let rest before slicing.
  2. While steak rests, chop cherry tomatoes, cucumber, and red onion. Toss with olive oil and salt.
Making and Assembling
  1. Mix tahini with water until smooth; add lemon juice and salt to taste.
  2. Slice steak against the grain. Layer veggies in bowls, top with steak slices, feta cheese, olives, and drizzle with tahini sauce.
