Ingredients
  

Chicken Marinade
  • 4 pieces boneless, skinless chicken breasts pounded to even thickness
  • 2 tablespoons olive oil for marinade
  • 1 lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Herb Crust
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 cup bread crumbs preferably whole wheat
  • 1/4 cup parmesan cheese grated

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
Prepare the Herb Crust
  1. In a separate bowl, mix together the dried oregano, thyme, rosemary, bread crumbs, and grated parmesan cheese.
Grill the Chicken
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and coat each piece with the herb crust mixture, pressing it onto the chicken to adhere.
  3. Place the chicken on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
Serve
  1. Remove the chicken from the grill and let it rest for 5 minutes before slicing.
  2. Serve with your choice of sides, such as a Greek salad or grilled vegetables.

Notes
